Premium Meats

When we decided to start our ranch and raise our own meat we decided to not only do it right but also to produce the best quality meat we could, taking into consideration every aspect of the process especially animal welfare. Starting with the heritage breeds we use, to the feed and what’s in it, to the animal husbandry practices we use, all the way to the final processing of the animals. Every single part of this process is important and contributes to the final results.

Premium Pork

Our pigs are a special cross from two of the most sought after and prized pigs in the world.  We cross the Mangalistsa and Berkshire pig and the result is a beautiful red marbled meat, with a creamy and flavorful fat.

Born and raised on pastures our heritage breed pigs are fed a mix of grains like barley, peas, triticale, and oats that are all grown just an hour away.  As a bonus they get all the snacks they want – organic milk from a local creamery, brewers grain from our local breweries, grape pomace from our local wineries and all the apples they want from our local coop.  Even more important than what we feed our pigs is what we do not feed them.  We do not use any corn, soy or animal byproducts in our feed and we also do not use any hormones or antibiotics. It’s a lot of work but in the end it’s worthwhile and the result is the best pork meat you can have ... if you’ve reserved a share.

Grass-Fed Lamb

Following the TM Ranch philosophy, our lambs are a product of breeding two of the most popular hair sheep breeds, South African Dorpers and the American Katahdin.  We specially choose these hair sheep breeds for their forage ability, resistance to parasites, hardiness and their low maintenance in general.  The biggest factor being that they do not have wool like a traditional commercial sheep and therefore do not produce as much Lanolin.  Lanolin is the oil found in wool that seeps into the fat and gives lamb that strong, sometimes gamey flavor. Without having the lanolin our lambs produce a much more mild and less greasy meat.

We specifically plan our lambing season so that our lambs can spend their whole life on green pastures.We do not separate our lambs from their moms and flock, we allow them to naturally wean themselves so they can get as much milk as needed and have the lowest amount of stress possible. All of this contributes to the high quality lamb meat that we strive to produce.

Local Beef

Beef is one of our favorite meats but it’s hard to find beef that was raised locally without being in a feed lot. That’s why we decided to raise a few heads in partnership with another local family. Our beef shares are limited and sell out fast!

We have been working with the same family in Twisp now for 3 seasons and somehow their beef gets better every season! It always rates as Prime and it is always complimented by the butcher staff.
